Cottage cheese and zucchini fritters

This very simple recipe for fritters fits in well with my theme of eating yourself young this month, with the added bonus that they taste delicious cold. So make a batch and bring them to work as a healthy lunch in a tupperware box the next day!

Makes approx 12 fritters

Cook time: 15 mins

Ingredients:

250g Cottage Cheese

2 medium sized courgettes, grated

2 green shallots, finely chopped

2 eggs, lightly beaten

1 tbs fresh dill, chopped

100g Doves Gluten free whole grain self raising flour

1 1/2 tsp Olive Oil

Sweet chilli sauce to serve

1. Place half the Cottage Cheese in a bowl. Add courgettes, shallots, eggs, dill and flour. Stir until well combined. Season with salt and black pepper.

2. Heat a large non-stick frying pan over medium heat. Add ½ tsp of the oil and swirl to cover base of pan. Form 4 fritters with 2 1/2 tbs of mixture each. Cook over medium heat for 2 mins on each side or until golden and cooked through. Transfer them to a warm platter, then repeat the process with remaining mixture to form a total of 12 fritters.

3. Serve the warm fritters with a dollop of extra cottage cheese on top and drizzle with sweet chilli sauce.
