Snapper wrapped in herbs

If you’ve started to dump the diet this April, here is a healthy and nutritious snapper recipe to help you. This couldn’t be easier or more delicious.  A simple source of high class protein for optimum energy and essential oils for radiant skin.  Fabulous!

Serves 4:
4 small snappers scaled and cleaned (or similar fish)
1-2 lemons  – 8 slices
4 tblspns butter
1 large handful flat leaf parsley
1 large handful basil
1 small handful dill

Pre-heat the over to 180C
Clean and dry the snapper.
Put some of the parsley and basil on each of 4 large squares of greaseproof paper and drizzle with olive oil.
Lay the fish on top
Place the lemon slices in the fish cavities
Place more parsley and basil over the fish and drizzle with more olive oil
Season with salt and pepper.  (take care – fish is naturally salty)
Wrap the parcels carefully, tucking in the ends to hold them in place.
Bake in the oven for approx 25 mins

Serve with a green salad and steamed new potatoes.
